blahness.


Would you believe that I'm still sick?
I'm one a snotty (and not in the arrogant way), moody lady...what a combo.
I've taken a plethora of medications none of which seem to work, which means there is probably a doctor in my future.

Despite all this I'm still a pretty happy gal for many reasons:

1. Husband purchased us a new ceiling fan during his lunch break today.
This is exciting because the one we currently have has no light on it.
No longer will I be digging through camisoles and unworn lingerie to find a likeable pair of undies in the morning while hubs and my 4 legged son soundly sleep (as pictured above).

2. Last night I finally had the pleasure of meeting week old Carson Leigh Teague.
She was so adorable in the way that only newborn babies can be.
*I truly cannot wait to be a parent.

3. I have a date with sister planned for Saturday that consists of mani/pedis and a new hairdo for me.

4. Later Saturday Mr. P and I are headed back to the lake to house/dog sit for a few days and I'm looking forward to hopefully enjoying beautiful weather and a grill suited for the chef I believe myself to be.

5. The top 20 contestants are announced this week for American Idol and I have a feeling it's going to be one heck of a good season.

Now just 1 more work day to get through .

v day sickness.

*Mr. P insisted I take this photo in the dollar aisle of Target last week. Can you tell how thrilled I was? Oh and how about those under eye circles?
But as soon as my hubs said something along the lines of 'let me take a picture of you holding my heart' I couldn't resist. He's cute and convincing like that.


I hope everyone had a happy lover's day.
Me, I'm still not feeling so wonderful.
I somehow made it through work yesterday with about 10% of my full vocal capablities.
I happily left work at 5pm, picked up some take-out, went home and took a very hot shower and waited on my sweet husband to arrive home with a half dozen cupcakes of which 5 were consumed last night.
Today I'm still not my normal happy self, in fact I almost got in a fight with a very rude patient, but I'm hoping to be back tomorrow with a belated weekend photo series.

exhausted.

Here's how the last week of my life has played out...

Last Saturday I drank a plethora of cocktails and stayed up way too late.
Sunday I drank loads of water, ate half a Digiorno pizza, 97 chicken wings and 2 huge slices of Tony's pizza. Did I mention I had some pizza?
Monday I almost fell asleep in the car on my ride home from work due to the lack of sleep over the weekend.
Tuesday evening was our first Book Club meeting and although I thoroughly enjoyed myself I didn't get to bed until almost midnight yet again.
Wednesday brought dinner with my father-in-law and what I thought were signs I could be getting sick.
Thursday, I'm sick.
Luckily for me I have an incredible husband who bought me a surplus of drugs and chicken noodle soup.


I'm feeling much better today which is fortunate since I have a whole night of truffle making ahead of me.
But first Mr. P and I have a Groupon we plan to use for dinner and one for dessert.
We're living the life baby. Living.the.life!

weekend photo series.

This past weekend we were quite the busy bee's...
There was packing up and heading back to the lake house, dinner with coworkers and of course the Superbowl.

Unfortunately for me and my blog the busier we are the less likely I am to take photos.
Shame, shame!
I promise to work on that.

The only real relaxing I remember doing was Sunday afternoon.
We laid in bed with the window open enjoying the cool breeze.
I snapped these photos and have a hard time picking a favorite.

lazy.

Hubs and I have been home at Casa de Diaz-Llaneza since Tuesday evening and it's been quite nice.
The rainy, dreary weather we've been having has made me oh so lazy.
I've cuddled with my 4 legged son.


Watched 6 episodes of American Idol.
2 of both Holly's World and Kim & Kourtney take New York...such garbage yet oh so addicting.

Baked a batch of brownies that claimed to be the best ever and that they certainly weren't.

So then I decided Rice Krispie treats could you be elevated to the next level by using Fruity Pebbles.


I dragged myself out of bed around 4pm this afternoon after OD'ing on Idol and the cure for my laziness came in the form of homemade pasta and a quick chicken piccata.
I've never had this dish before so I had nothing to compare it to, but Mr. P seemed to enjoy it, especially the homemade noodles.


Now with my tummy oh so full it's time to turn in for the night.
Tomorrow it's back to the lake for another full week of dog/house sitting.

colder weather.

My sister, she's awesome.
Now her taste in music, questionable at times.
However, on one of our daily talks a few weeks ago she asks me if I've heard Zac Brown Band and Amos Lee's version of Colder Weather.
We'll I've heard the song, I heard it last Spring in fact.
But this version, nope, I sure hadn't.
Last weekend my darling hubby sat quietly working on his computer while I sat mesmerized by the CMT Top 20 Countdown.
Somewhere inside the top 10 this video came on.
I stood up. I swayed. I cried.
I rewound and watched 3 times in a row.
There is no voice like Amos Lee's and when he begins to sing I get the chills.
It's that good.
The lyrics get me every time. Not sure why? As far as I know there isn't any one I love stuck in colder weather, I hope not at least.
And the love of my life, my Mr.P, thank goodness, doesn't have a gypsy soul.
Still, this song touches me.

green pork chili.


Mr. P and I love a good taco.
We've learned there are certain ingredients you can combine with just about any meat and the result is a perfect filling for a doughy flour tortilla.

Green pork chili never quite turns out the same when I make it because I'm always adding a different combination of ingredients.
However, this past weekend I took note of the ingredients I used in hopes they would produce a great batch...luckily, they did just that.

The key word in this recipe is 'green' and that's evident in the items I purchased.

Ingredients:

1 16 oz bottle of Salsa Verde
2 serrano or jalapeno peppers, diced
*normally I would choose to go with the jalapenos, but Target was out...boo!
2 limes
1 10 oz can of green enchilada sauce
1 4.5 oz can of green chilies
1 bunch of cilantro
1 medium sized red onion, chopped
2 garlic cloves, minced
1 14 oz. can of chicken broth
1 Tbsp. Mexican Oregano (smokier than your typical Mediterranean oregano)
1 Tbsp. Cumin
1 Tbsp. Chili Powder
1 5 lb. boneless pork butt

I began by heating about 2 tablespoons of olive oil in a large skillet.
Sear all sides of the pork butt to lock in flavor.

Once you have seared the meat, place it in your slow cooker.


Use that same skillet and cook the onion, peppers and garlic for about 7 mins. I used a few tablespoons of chicken broth to deglaze the pan and scrape up the brown bits left behind by the pork.


I then added the vegetable mixture, as well as the remaining ingredients (minus the cilantro) to the slow cooker.
Cook on high for 5-6 hours.
Add the cilantro, I used half the bunch, during the last 30 minutes of cooking time.

Serve inside flour tortillas and along side refried beans.
