dinner.

It occured to me that I hadn't done a recipe post in awhile and that's in large part because Mr. P and I have been eating lots of the same thing.

Our new recent fav is a healthier version of Micky D's Egg McMuffin.


Thomas makes a light multi-grain english muffin with 100 calories and 8 grams of fiber.
Top that with a *perfectly cooked over medium egg, a thick slice of ham and a slice of reduced fat american cheese and you have yourself one decently healthy, very scrumptious meal.


Last week we had that exact same meal 4 days in a row.
I served it alongside a **fruit salad made with fruit leftover from when I made sangria.

*I really feel I've mastered the perfectly cooked egg and I think my husband would agree.
Make sure you have your skillet heated to med-high heat, add a big tablespoon of butter (we use Brummel and Brown because it's healthier ), crack in your eggs (I do 2 at a time), sprinkle on fresh cracked pepper and sea salt, then cook 2 minutes per side or until the yolk is the consistency you like.

**To jazz up a fruit salad add a few splashes of your favorite orange juice and some brown sugar. This tip courtesy of the one, the only Mama San.
